  • The lid must accompany the mold during the entire baking process, but should only be supported, not tightly fitted.

  • Always place molds on the lowest rack in the oven.

  • The oven must be set to “BAKE” mode (do not use BROIL, GRILL, or CONVECTION).

  • Do not heat the water in the bain-marie before baking – use room temperature water.

  • Do not cover molds with aluminum foil.

  • Do not allow the bain-marie water to dry out during baking.
