IMPORTANT:
The lid must accompany the mold during the entire baking process, but should only rest on top, not be fitted tightly.
Always place the molds on the lowest rack of the oven.
Set the oven to “BAKE” mode (do not use BROIL, GRILL, or CONVECTION).
Do not preheat the water in the bain-marie — always use room temperature water.
Do not use aluminum foil on top of the molds.
Never let the bain-marie water dry out during baking.
If the lid does not fit:
This may occur due to uneven contraction between the lid and the mold. Ensure the lid accompanies the mold during the entire baking and cooling process.
If the pudding is not ready on time:
Oven power may vary. Gradually increase the temperature and observe the baking process.
If the product deforms or melts:
Temperature may be too high. Reduce oven temperature and increase cooking time if necessary.
Ensure there is no direct contact between molds or with the metal baking pan.
Always maintain enough water in the bain-marie.
